I make my sounds with a garage full of noise makers and recently did the air starter for the Jaguar with Cakewalk a midi controller and a selection of 2500 VSTs. There are many ways to create some nice sounds just be creative. You may not have things to make them but i would be happy to help at request. Time is an issue so you may not have them the next day.

Smooth-running steering column (as in 777)

The 777 has fly by wire - the 737 doesn't :)

Are you using the 737-800YV from here: https://github.com/YV3399/737-800YV ?
Which version of FG are you using (Help->About) ?
When does the stall happen? At what speed? In which situation?

Are you sure you're using the latest version of the plane? I recall there was some problem fixed with the ailerons (?) at some point end of last year.

I've been flying this version regularly in 2019.2 and other versions and never had a problem like you describe, it flies nicely. ~270kt at FL350 it's pretty standard cruise level, I have hundreds of flight hours in those conditions in the 737-800YV.

If you can reproduce, what is the weight of the aircraft when this is happening? What maximum bank angle do you use? (It can set in the Autopilot dialog and with a knob around the heading controller in the panel).

You must be excessively heavy and exceed the 30 deg bank angle for that to happen.
