When on auto pilot the yoke is at rest. When I unselect Pitch control/altitude the plane doesn't dive.
I am not sure I follow, but if I understand correctly you say that you move the yoke to a neutral position and then try to trim the aircraft. Usually one try to hold attitude while trimming, moving the yoke/joystick towards the neutral position while trimming for it. In essence trimming is just as much about not having apply so much force to the yoke, joystick or pedals as it is about keeping the aircraft at a certain attitude.
While talking about trimming, the mnemonic, PAT-REA, in that order, might be useful at some point later:
- Power
- Attitude

- Elevator
