I wonder if the (windows app) CABLE (a virtual audio device) or similar could mix the FG audio and the incoming mic - I think I'm getting into the realms of full on audio production here (an interest of mine), next I'll be asking for passenger sounds in the background, screaming kids etc haha

you ca do all sorts of things with audio mixing, i played with jack and pulseaudio in the past. Regarding FGCom-mumble, I would consider that out of scope, however

I would guess thats not a problem with the Lycoming O-540
(or your engine sound volume is not realistic enough, haha)
Within the context of our GA-Wednesday I've missed a bit the casual chatting, but can be handled depending on what kind of event we do (And yes to the ATC-pie!)
One idea might be, to establish two-comms mode:
- COM1 on a real flying frequency, like the tower one, or one we agree onto beforehand
- COM2 on AIR-AIR frequency for casual chatting
This way, I can tune down (or even mute) COM2 for critical flight phases; also chatting on COM2 does not block audio on COM1.
This requires a plane with a reasonably well modelled radio stack, however.
Default FGCom PTT buttons are: SPACE=COM1; SHIFT+SPACE=COM2
