is it possible to show/hide/move 3d instruments in the cockpit?

You want to do that online at runtime? Then you need to add the appropriate anmiations to the 3d model XML file that loads and places the instruments.
There is some documentation about animations in FG on the wiki and in the Docs directory in the data directory.
