Could I add it to my resume?

Can I add "Project contributor" with Flightgear as the organization, on my LinkedIn and my resume? Can I list some of the models or work I am contributing/ed to right now, on my resume and LinkedIn?

I don't see why not. As long as you're honest about what you have done.
