They should be fully supported under Linux (note i'm using it on a Mac) as FG doesn't rely on the drivers for various functions, as everything can be configured by the joystick.xml.
There are a few things to be aware of with the yoke:
1) Out of the box, the dead zones on the yoke are massive. This can be fixed to a certain extent in software but you need to do this on a Windows 7 or 10 PC that has the Logitech driver installed. There are hardware fixes but these invalidate the warranty of course.
2) The yoke movement range is only 180 degrees, this may be too little, and I find it to be over sensitive in the mid-zone. This can be fixed in software by making the yoke response non-linear (more in this thread -

Overall, personally, i'm happy with it (once I got used to the dead zone and made the response non-linear). There are other options - many rate the Honeycomb Alpha yoke highly but it's double the price and doesn't have a throttle quadrant included, so you'd have to budget for this too.
As for the pedals, in my opinion they're fine - no complaints with these.
