it seems that right now, the boat moves mainly on pitch but that is a great start.

Would it need to be possible to add this behavior to an AI ship (carrier or carrier 's escorts)?

No, not easily since it is for the primary (aircraft) FDM, i.e. the "player"'s craft and is built up (well, more or less) from generated forces and rigid body mechanics using JSBSim. The AI FDMs are very different and should probably be handled differently (e.g. through scripted movements).

To reconnect to the original topic: my Gokstad Viking ship is relatively (or perhaps somewhat, there is something odd with the sail) sailable now, but how realistic its (simple) physics may be is rather unclear and being a landlubber I'm rather unfamiliar with how boats handle.

To elaborate on AndersG's comments, see the summary at: http://wiki.flightgear.org/Status_of_AI_in_FlightGear

Which is to say that you can only get so far with scripted FDMs - sooner or later, it may be easier to actually extend the AI code to support actual FDMs (think JSBSim/YASim), which is a long-standing idea suggested by many core developers originally - it's just that the actual development of the AI subsystem took a very different path. Anyway, the power of scripted AI dynamics can be seen in tanker.nas, fox2.nas and particularly the bombable addon - all of which get away without using an actual FDM, using just scripted dynamics.

I found a sailing simulator that it currently in beta stage. https://sailaway.world/index.html is the site.

It looks good, but I won't be able to do anything with it unless and until they make it work OFFLINE. One email exchange with a developer indicates there is no plan to make it work offline. What a shame.

If Flightgear can work offline, there is no reason a sailing sim couldn't. Dang, why does everything have to be online, when it really doesn't?

So hat's off to Fightgear architects who got it right the first time.

Anyway, check out Sailaway at the link. You'll have to register, and get a download link. It looks very beta at this point, but dang, it is a salboat!

We have a bunch of ships in development at FGUK. I was pointed to a piece of code on this forum post which
I adapted to our use:

A few videos about the results:
