He I wand to know what or where i can find the documentation about the variables of /instruments/nav, /instruments/adf, /instruments/dme, /instruments/com?

Unfortunately it seems like the best thing is to look around in the property browser while playing with the radios and instruments. Reading in how the the navigation instruments are supposed to work, from say FAA's Pilot’s Handbook of Aeronautical Knowledge, Chapter 16: Navigation (PDF, 36 MB), pages 22-31, will help a bit but might take a bit of experimentation and shorter navigation flights to fully grasp.

The next step is the source code... :|

Sadly I found the only way to find out what the nav compass (gyro, fluxgate etc) properties did was to read the source code.
As others have done, I ended up writing my own code in nasal for these systems.
